Football is back, mornings have a chill in the air, coffee houses have their pumpkin and spice drinks out, and I’m craving pumpkin 🙂 Yes I know fall doesn’t officially begin until September 22. That isn’t putting a damper on my excitement for the upcoming season though! Sometimes I want pumpkin dessert but don’t feel like putting the time into a full pie or pumpkin roll. That is why I created pumpkin pie in a mug! Simple, fast and oh does it hit the spot when I’m craving a pumpkin spicy dessert 🙂
Ingredients:
1/2 cup pumpkin purée
1 egg
2 Tablespoons sugar
1 Tablespoon flour
1 teaspoon pumpkin spice
1/4 teaspoon baking powder
Dash of salt
Mix all the ingredients in a mug. This is what it will look like before going into the microwave.
Microwave for 2 1/2 minutes on high. It will come out hot! Let it cool for a few minutes. While it cooled I whipped up some whipped cream to top it off with 🙂
Oh the spicy pumpkiny (I know I’m making up words) goodness! This was a bite of heaven for this fall loving girl.
