Irresistible Peanut Butter Cookie Recipe

So as my family, friends and loyal readers know I am terrible at making chocolate chip cookies, more about that here. When it comes to peanut butter cookies though I have a recipe I love!

Ingredients:

1 stick of butter
1/2 cup of shortening
1 cup white sugar
1 cup brown sugar
1 1/2 cups peanut butter
2 eggs
1 teaspoon vanilla
2 1/3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons baking soda

Cream together the butter, shortening, white sugar, brown sugar and peanut butter. Add the eggs one at a time while mixing. Next add the vanilla, baking powder, salt and baking soda. Stir in the flour and then let chill in the refrigerator for at least one hour. Preheat your oven to 350 degrees. Roll small balls of dough and place on a cookie sheet. I like the crisscross pattern on my peanut butter cookies so I use a fork dipped in water to make the pattern before putting them in the oven. Bake at 350 degrees for 8 minutes.

Sadly this recipe makes 5 dozen cookies, and I want to eat them all! Good thing I have a peanut butter loving husband and kids who gladly help save me from gaining ten pounds eating them alone 🙂 thanks for stopping by!

  1. Do you have any idea how much a stick of butter is in ounces. I live in the U.K. And love your blog and recipes. My Son in Law would love your peanut butter cookies and I would like to bake them for him as a treat.

I like to use the Crisco buttery flavored shortening that comes in sticks for this p.b. cookie recipe….but fyi; you said for the choc chip cookies you are always looking for ways to keep them softer? for either cookie recipe my older brother always learned/taught me from great-grandma put a piece of bread in the Tupperware containers until ready to serve or give away…it definitely keeps all cookies softer all the time!!!
